Prototyping is done in ingredient selection, which involves functionality, availability, cost, regulatory compliance, and sensory impact. Emulsion behaviour is assayed based on viscosity, stability, flavour release, pH control and thermal tolerance.
Once the emulsion system has been specified, the ingredient proportions and processing conditions are adjusted to provide the desired creaminess and spreadability, taste equilibrium, and appearance. Universal issues like oil separation, over-thickening, off-flavours or instability in eggless systems are resolved by refinement of formulations and process modifications.
The last stage is the assessment of the possibility and cost-effectiveness of production in large-scale production. Sourcing ingredients, producers, production techniques and packaging are continuously optimised to guarantee economic feasibility without compromising the quality and shelf life. The product of the effort is a well-built technical and commercially scalable formulation.
At Foodsure, a food product development timeline starts with market research and concept finalisation, and if necessary, goes to recipe development, lab trials, and sensory validation. After that, shelf life testing is conducted, FSSAI compliance checks are run in parallel, costing and COGS are finalised, and the product is validated through a pilot run of 50-500 kg.
