1. Idea Validation

This will start with the stage of idea validation, where the idea of mayonnaise is tested on the basis of market demand, consumer preferences (egg-based vs. eggless), price positioning, and competition. This is done to reduce the number of ideas developed that are not viable, and thus, needless development time and cost are saved.

Research and Conceptualization 1

The product concept is defined once it has been validated. The main considerations are the type of product, fat level, egg/egg-replacer strategy, flavour profile, nutritional positioning, shelf life expectations and consumer or foodservice audience. This phase offers a clear technical and business roadmap in which it can be formulated.

Define Your Beverage Idea

Prototyping is done in ingredient selection, which involves functionality, availability, cost, regulatory compliance, and sensory impact. Oils, emulsifiers, stabilisers, acids, seasonings and preservatives are keenly considered. Emulsion behaviour is assayed based on viscosity, stability, flavour release, pH control and thermal tolerance.

Recognize the Gaps in the Market

Once the emulsion system has been specified, the ingredient proportions and processing conditions are adjusted to provide the desired creaminess and spreadability, taste equilibrium, and appearance. Universal issues like oil separation, over-thickening, off-flavours or instability in eggless systems are resolved by refinement of formulations and process modifications.

Regulatory Knowledge

The last stage is the assessment of the possibility and cost-effectiveness of production in large-scale production. Sourcing ingredients, producers, production techniques and packaging are continuously optimised to guarantee economic feasibility without compromising the quality and shelf life. The product of the effort is a well-built technical and commercially scalable formulation.

Food Product Development Project Timeline

At Foodsure, a food product development timeline starts with market research and concept finalisation, and if necessary, goes to recipe development, lab trials, and sensory validation. After that, shelf life testing is conducted, FSSAI compliance checks are run in parallel, costing and COGS are finalised, and the product is validated through a pilot run of 50-500 kg.

This well-organised method covers all stages of work from ensuring the product is technically feasible, getting it ready for the regulations, keeping the costs under control, and the last step being the commercial production.
