We will start with a concept of your snack, with whom you are going to sell them, how much they will cost, and what position they will have in terms of nutrition. The feasibility is analysed depending on the choice of millet, compatibility of ingredients and manufacturing feasibility.

The structure of snacks, direction of flavours and mix of ingredients are planned. In the case of ragi snacks development, we consider nutrition against taste; the jowar snacks recipe considers the texture and the puffing behaviour. The Bajra extruded snacks are produced with a stable flavour and product structure.

Moisture behaviour, binding behaviour, extrusion and flavour interaction are analysed on the raw materials. The prototype is controlled to test crunchiness, expansion, seasoning adhesion, and sensory performance.

Critical parameters, including moisture control, ingredient ratios and processing conditions, are optimised. Labelling and documentation are compliant with the FSSAI regulations and export requirements.

Taste and texture are authenticated by the senses. The shelf-life studies and the compatibility tests of packaging determine the crispness of the products, the consistency of their flavour and safety when storing the products.

Pilot batches confirm the processing efficiency and the batch reproducibility. The manufacturing equipment of commercial snacks is optimised with respect to processing parameters that will allow scale-up.

We start with the concept development and definition of the requirements, target market and positioning. Thereafter we generate final ingredients, choose ingredients scientifically and determine dosage and prototype and stability test. Upon checking compliance (FSSAI labels, claims) a pilot batch will be run, and full scale production will commence with the SOP finalization and commercial production support.
