The development of clean-label seasoning starts with concept validation, in which the idea of seasoning is coordinated with brand positioning and expectations of the target consumer. Clean-label requirements, including non-GMO, vegan, gluten-free, additive-free, or preservative-free, are predetermined. Limits of formulation are set early to make sure it is transparent, compliant with regulations and trusts consumers.

Then, after being validated, the flavour strategy will have a clean-label orientation. The goal is to achieve a seasoning that provides an instant effect of flavour, a mid-range equilibrium, and a gratifying finish using only natural ingredients.
