We start with knowing your product idea, target market, format (snack, bakery, mixes), nutrition objectives and pricing approach. The feasibility is evaluated under the premises of ingredient functionality, the need to certify gluten-free, and the commercial scale.

The formulation strategy is developed by choosing the right gluten-free grain systems, binders, stabilisers and texture-building ingredients. An example is the celiac snack development, which is concerned with safe ingredients and palatable taste, whereas the gluten-free bakery formulation is concerned with structure, softness and shelf life.

The gluten-free flours, starches, hydrocolloids and protein systems are assessed in terms of functionality, texture, and moisture behaviour. Lab prototypes are also carefully designed to test the texture, taste, product stability, and processing compatibility.

The most important formulation parameters, such as water activity, binding systems, texture stability and shelf-life behaviour, are optimised. The documentation and labelling of the products are oriented in accordance with the Food Safety and Standards Authority of India (FSSAI) and the gluten-free compliance standards.

Tasting, texture, smell and acceptability. Consumer acceptability, taste, texture, and aroma are checked with sensory testing. Stability testing assures shelf-life performance, whereas packaging compatibility studies safeguard the product against the effects of moisture, oxidation and contamination.

Pilot-scale tests are also performed to ensure consistency in the processes, equipment interoperability and reproducibility of a batch. Optimal production parameters are maintained, whereby the process of development is smoothly transferred to high production.

At Foodsure, a food product development timeline starts with market research and concept finalisation, and if necessary, goes to recipe development, lab trials, and sensory validation. After that, shelf life testing is conducted, FSSAI compliance checks are run in parallel, costing and COGS are finalised, and the product is validated through a pilot run of 50-500 kg.
This well-organised method covers all stages of work from ensuring the product is technically feasible, getting it ready for the regulations, keeping the costs under control, and the last step being the commercial production.
