Ingredient selection lays emphasis on clean-label spices and functional ingredients which fulfil regulatory, nutritional and commercial specifications. No-MSG, low-sodium, preservative-free, vegan and exportable choices are taken without reducing the flavour intensity. All the spices and ingredients are tested for heat stability so that flavour integrity can be guaranteed when using them in the heat process of frying, baking, or roasting.
The chip substrate is optimised for formulation. It is seasoned to be in line with potato, banana, multigrain, lentil or extruded chip bottom, keeping in mind surface texture, oil level, processing technique, and spice adhesion. The behaviour of particle size, density and seasoning is also modified to maintain a homogenous application and loss is minimised in the tumbling and packaging process.
The micro-batches are prototyped and tested on actual chip samples. Sensory analysis is on adhesion, the release of flavours in the mouth, mouthfeel, heat and aftertaste. The refining of the seasoning has been done through internal tests with trained sensory panels until there is a close match between the laboratory performance and the actual real-world performance.
Process stability and shelf-life are then determined once flavour performance has been completed. Such issues as clumping, moisture sensitivity, and flowability are resolved with clean-label solutions instead of synthetic anti-caking agents. Packaging compatibility is also checked so that there is seasoning stability during storage and distribution.
At Foodsure, a food product development timeline starts with market research and concept finalisation, and if necessary, goes to recipe development, lab trials, and sensory validation. After that, shelf life testing is conducted, FSSAI compliance checks are run in parallel, costing and COGS are finalised, and the product is validated through a pilot run of 50-500 kg.
