An excellent plant-based protein product starts with idea validation, where the new idea is tested in relation to market needs of plant-based food, predicted consumer acceptance, and competitive positioning. This activity will enable the identification and removal of non-viable ideas at the initial stages, when devoting resources to technical development is not necessary.
Upon validation of the idea, the product concept is outlined in detail. The major choices are product format, the amount of protein per serving, protein source strategy, nutritional positioning and a specific segment of consumers. This process provides a directional guideline that facilitates the formulation process as well as commercial goals.
The selection of ingredients occurs at the stage of prototyping, where the emphasis is on functionality, availability, nutritional value, cost, and compliance with regulations. The last measure is the evaluation of technical feasibility and cost of production to ensure that it is appropriate in the production of a large scale. Ratio of ingredients, processing techniques, and predicted yields are constantly modified in order to make sure that it is economically viable, while preserving the quality of the products. What has been obtained is a technically sound and commercially scalable formulation.
